Travelling to Athens, Greece in May 2012 with my fiance, we fell in love with the healthy food. Immediately she decided she must learn how to make Greek food. Greek yoghurt, or yogurt, is famous around the world for its quality and taste. Seasonal and farming conditions played a large role in the yoghurt production. From late Fall to early June is the time period for sheeps’ milk which the yoghurt is made from. Seasonal issue are because of the summer temperature is when the lamb will stop producing milk and also makes for a bad time to store yoghurt. Yoghurt had a big push in Europe in the last century for its health benefits, not to mention the boom in yoghurt in the health crazed West. Normally cows are used to make yoghurt, which Greece soon adopted. But instead of sweetening the thin and sour cow’s milk, it is strained creating a dense creamy mass which loses most of its sourness.
